First of all, without examining her I can not be sure. One of the first thoughts that I had reading your post is that she tore a tendon in her foot. The best guess is the Posterior Tibial tendon. This can be seen often in older folks and they will commonly tell me "all of a sudden my arch collapsed."

As far as what you could do, I can't say because I do not know the extent of the problem. I recommend she see a podiatrist or her orthopedit and have an MRI for further evaluation.
